These are particular strengths born from a long tradition in the world of coffee. The secret of our blends lies in the sensibility and the experience of the people who are responsible for the production of the blends: every day, we listen to the coffee, we hear it crack and pop as it roasts, we recognize the moment that it is ready. We only roast the blended beans, rather than the single origin coffee beans separately; this is more complex and challenging but is the method which better enhances the special characteristics of the various single origin beans and gives us a coffee of exceptionally high quality.
